Gingerbread Cake
Ingredients

1 2/3 C all purpose flour
- 1 ¼
tsp baking soda

¾ tsp cinnamon

¾ tsp salt

½ C sugar

1 beaten egg

½ C dark molasses
- Vegetable oil
Preparation
- Stir (all but the vegetable oil)
until completely mixed - looks like wet sand
- Add ½
C vegetable oil
- ½ C
boiling water
- Stir
until looks like a cake batter
- Preheat oven
350o
- Oil
& flour 9” pan
- Tap
down to settle
- Bake
for 35 minutes
Glaze Topping
Ingredients
- 2/3 C
powered sugar
- 3 tbs
lemon juice
Preparation
- Whisk
to mix together
- Glaze
cake while hot
- Let
cake cool
